This has become a family favorite that we eat on a weekly basis. The combination of salmon, brussel sprouts and lemon vinaigrette dressing complement eachother amazingly well.

Preheat oven to 400 F.
Season salmon fillets and lay on a foil lined pan and bake for 20 minutes.
Finely slice brussel sprouts. Chop apple, mozzarella cheese, and almonds or pecans and add to a medium sized bowl.
Toss salad with lemon vinaigrette dressing. You can substitute any other vinaigrette dressing but the lemon brings out the other flavors really well.
Plate salmon either on the side or on top of salad.
Sometimes we add crutons or fried onions but neither are necessary.
